Vinification: the grapes are harvested from September to October and fermented on the skins with around two weeks of maceration and regular pumping-over. Autolytic fermentation takes place at 25ºC.
Maturation: the wine matures for one year in small and medium barrels of French oak, and for at least three months in the bottle before being released on the market.
